I love the British Baking Show..and recently in my enthusiasm, bought cookbooks by both Mary Berry and Paul Hollywood. This lovely springtime pie is a recipe from Mary Berry's, "Baking With Mary Berry."
Dough
1 1/3 c. flour
6 T. butter
2-3 T. cold water
Put the flour in a bowl, cut in butter with a pastry blender or your fingers until the consistency of fine crumbs. Stir in water, form into a disc and cover with plastic wrap. Refrigerate for 30 minutes.
While that is refrigerating make the filling:
1/2 t. cinnamon
1/3 c. cornstarch
2/3 c. sugar
Mix together well. The mix in
12 oz. strawberries, hulled and cut in half
1 1/2 # rhubarb, thinly sliced
Allow this to sit for 20 minutes.
Take dough out of refrigerator and divide in half. Roll out one half large enough to fit your pie plate.
Place in pie plate and then fill with the filling. Roll out the other half of the dough and cut into 1/2 " strips. Place on top of pie like a lattice. (See Picture).
Bake at 425 degrees for 10 minutes. Turn oven down to 350 degrees and bake an additional 10 minutes.
