Cheesy Seafood Pasta Bake



This creamy, cheesy casserole comes in at only 320 calories a serving.  If you want to serve it straight from the cooking pan, you can skip baking it in the oven.

3 c. large shells, cooked
1 1/2 c. evaporated milk
1 c. chicken or vegetable broth
2 T. cornstarch
1 T. olive oil
3 stalk celery, sliced
2 c. sliced mushrooms
2 cloves garlic, minced
3/4 c. cheddar cheese
2 T. cream cheese
1 1/2 t. Old Bay seasoning
2 c. peas and carrots
12 oz. shrimp
8 oz. crab meat

Mix mik, broth and cornstarch in a bowl or large liquid measuring container.  Heat oil in a saute pan.  Add mushroom, garlic, and celery.  Cook about 5 minutes, then add in the carrots and peas.  Cook an additional 3-4 minutes.  Add in the milk mixture, and stir as it thickens.  Stir in cream cheese and cheddar cheese.  Stir in the cooked shells.  Serve as is or put in a 11 x 8 in. baking pan and bake at 350 degrees for 20 minutes.
