Avocado Shrimp Tostados

These are so simple, quick to make and delicious!  Serve them up with a margarita.



6 small street size flour tortillas
1T. Corn oil

Put the tortillas on a baking sheet.  Brush with the oil.  Put into a 375 degree oven for 5 minutes.  Flip and cook another 3 to 4 minutes.  Remove from oven.

1/2# cooked and deshelled shrimp
1/2 cucumber, diced
1 avocado, diced
1 Roma tomato, diced
1/2 c. Chopped cilantro
1/4 c. Diced red onion
Juice from 1/2 a lemon
Combine all ingredients.  Serve over tostados.
