This is a quick and easy dinner that can be served with a nice salad for a light dinner. Sometimes on a hot night, a lighter meal seems to be a better fit. You can add any other ingredients you would like to your little mushroom pizzas-I added some cooked Italian sausage to my sweethearts.
2 portabello mushrooms
1 red pepper
2 roma tomatoes
1 large clove garlic
1 t. olive oil
1 t. Italian seasoning
dash of cayenne for each mushroom
1/2 c. mozzarella cheese
Turn mushrooms upside down and remove stem. With a spoon, scrape out all the brown gills.
Place the mushrooms on a baking sheet. Sprinkle with a little salt and pepper and a dash of cayenne. Put into a 400 degree oven and bake for 5 minutes.
Cut up the tomatoes, garlic, and red pepper. Place in a food processor with the oilve oil. Process until smooth. After the mushrooms have baked for 5 minutes, spoon the sauce into each mushroom cap. Sprinkle with Italian seasoning and cheese. Return to oven and bake until cheese is melted.
