Caprese Chicken Breasts



These are very light, and require very little preparation.  If you want to ramp up the flavor, sprinkle some balsamic vinegar over the top.  This recipe serves two.

2 boneless skinless chicken breasts
2 tomatoes, sliced
1 ball fresh mozzarella cheese, sliced
1/2 c. fresh basil
balsamic vinegar (optional)

Make 4-5 cuts across the tops of each chicken breast.  In each cut place a slice of mozzarella cheese, a slice of tomato, and a few pieces of basil.  Bake at 400 degrees for 40 minutes.
