This recipe uses a 4” ramekin as a pan to make a large muffin big enough for two. If you don’t want to share you can double the recipe to make two large muffins.
For one large muffin
In a bowl combine
3 T. Maple syrup
2 T. Melted butter
3 T. Milk
1 egg
1 T. Sour cream
1/8 t. Vanilla
Whisk until well combined. Stir in
1/2 c. Flour
1/2 t. Baking powder
1/8 t. Salt
2 T. Brown Sugar
1/4 t. Cinnamon
Spray ramekin with cooking spray. Pour batter into ramekin.
In a small bowl combine
2 t. Flour
2 t. Brown sugar
1/2 T. Butter
1/4 t. Cinnamon
1T. Chopped nuts
Sprinkle over top of muffin.
Bake at 400 degrees for 20-25 minutes.
For one large muffin
