This makes a great coffee cake or even a dessert cake after dinner. It is delicious wit a cup of coffee or tea in the afternoon. It is an all day enjoyment. I found this recipe on the blog desserts.com.
For the cake batter
2 c. Flour
2 t. Baking soda
1/2 t. Salt
1 T. Pumpkin pie spice
1 c. Canned pumpkin
1/4 c. Milk
1/4 c. Canola oil
1 t. Vanilla
3/4 c. Sugar
In a bowl mix together the pumpkin, oil, sugar, milk and vanilla until well combined. Put the flour, baking soda, pumpkin pie spice and salt into the bowl and mix well. The batter will be thick. Spray an 8 x 8 inch baking dish with cooking spray. Spread batter in the pan. Top with streusel. Bake at 350 degrees for 35 minutes.
Streusel
1/4 c. Melted butter
1 T. Cinnamon
1/2 c. Chopped nuts
1/2 c. Flour
1/2 c. Brown sugar
Mix well
