Starbucks Copycat Pumpkin Bread




This recipe claims to create a pumpkin bread that tastes just like Starbuck's.  The recipe calls for pumpkin seeds on top.  You can substitute any nuts you have on hand if you don't have pumpkin seeds.  I used chopped pecans.  This makes a tasty breakfast or snack.

  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 2 tsp. pumpkin pie spice*
  • 1 t. cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2/3 cup vegetable oil, or canola
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 tsp. vanilla extract
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 2-3 Tbsps. pumpkin seeds

  • In a mixer combine oil,  eggs, vanilla and sugars.  Mix until smooth.   Mix in pumpkin.  Sift together the flour, spices, and baking soda.  With the mixer on a low speed, slowly add in the sifted mixture.  Spray a loaf pan with cooking spray.  Pour batter into pan.  Sprinkle with nuts. Bake at 325 degrees for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
