This recipe claims to create a pumpkin bread that tastes just like Starbuck's. The recipe calls for pumpkin seeds on top. You can substitute any nuts you have on hand if you don't have pumpkin seeds. I used chopped pecans. This makes a tasty breakfast or snack.
- 1 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 2 tsp. pumpkin pie spice*
- 1 t. cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2/3 cup vegetable oil, or canola
- 3/4 cup white sugar
- 1/4 cup brown sugar
- 2 tsp. vanilla extract
- 3 large eggs
- 1 cup canned pumpkin puree
- 2-3 Tbsps. pumpkin seeds
- In a mixer combine oil, eggs, vanilla and sugars. Mix until smooth. Mix in pumpkin. Sift together the flour, spices, and baking soda. With the mixer on a low speed, slowly add in the sifted mixture. Spray a loaf pan with cooking spray. Pour batter into pan. Sprinkle with nuts. Bake at 325 degrees for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
