I am still working my way through my leftover ham from Easter. This was a very easy recipe. It makes quite a lot so if you have a small family you may want to 1/2 the recipe.
1 T. olive oil
1/2 c. chopped onion
3 cloves of garlic, minced
3 c. cubed ham
1 T. parsley
2 t. Italian seasoning
1/2 t. red pepper flakes
3 c. chicken broth
2 c. half and half
1/4 c. flour
16 oz. mini penne noodles
2 c. frozen peas, defrosted
2 c. frozen broccoli, defrosted and chopped
2 c. Parmesan cheese.
Place olive oil in a Dutch oven and add onion and ham. Saute until onions are transparent. Add garlic and cook another minute or two. Stir in broth, milk, flour and noodles. Bring to a simmer and cook 10-15 minutes or until noodles are al dente. Add peas, broccoli and seasonings. Heat for another 5 minutes, then stir in cheese.
