This recipe makes two large single serve coffee cakes. Not everyone has a large household..some of us are cooking for only one or two people. This recipe comes from the website, Onedishcookingcom. If you want a treat, but not a dozen, this recipe is for you.
4 T. Melt d butter
8 T. Sugar
2 egg yolks
1/2 T. Vanilla
10 T. Flour
1/4 t. Baking powder
1/4 t. Salt
1/4 t. Cinnamon
2 T. Milk
1/3 c. Mixed blueberries and raspberries
In a medium sized bowl mix with he butter and sugar. Add in the egg and vanilla. Next mix in the flour, baking powder, salt, and cinnamon. Mix in the milk. Gently stir in the berries. In two
6 oz. baking ramekins, spray with cooking spray, and fill each with half the dough. Bake at 350 degrees for 40 minutes. I set my ramekins on a baking sheet.
