Goat cheese and Asparagus Frittata



This is a lovely light dinner..perfect with a side of fresh fruit.  If goat cheese is not your favorite, Parmesan would be a good substitute.  Frittatas cook up quickly and are a great choice if you are short on time.

8 eggs
1/2 c. Crumbled goat cheese
1/4 c. Diced onion
1 clove of garlic, minced
1# asparagus
1 T. Olive oil

In an oven safe skillet heat the oil, onion and garlic.  Sauté for 2-3 minutes.  Beat eggs well and pour into the pan.  Sprinkle goat cheese over top.  Cook for 2 minutes on medium heat.  Cover and cook for 6 minutes.  Uncover and place under a broiler for 3 minutes.
