Apple Cider Doughnuts



These doughnuts are baked, so you will need a doughnut pan to make them.  The flavor is rich and deep due to boiling the apple cider down to a syrup like consistency.
This recipe makes about 15 doughnuts.

10 T. Butter, melted
1/2 c. Brown sugar
1/2 c. White sugar
2 eggs
2 t. Vanilla
3/4 c. Buttermilk
2 c. Apple cider
3 t. Baking powder
3 c. Flour
Pinch of salt
3 t. Cinnamon
2 t. Nutmeg

Boil cider until it reduces to 3/4 cup.
Mix together butter and sugars until smooth.  Mix in eggs and vanilla, then buttermilk and apple cider.  Add remaining dry ingredients and stir just until mixed.  Spoon into doughnut pan. Bake at 375 degrees for 15 minutes.  After baking, if desired, sprinkle with cinnamon sugar.
