This lovely curry uses easy products from Trader Joe's, but you could easily ingredients from your local supermarket.
1# chicken breasts or boneless thighs cut into 1" pieces.
12 oz. sweet potatoes cut into ribbons
12 oz. fresh green beans
11 oz. thai red curry sauce
rice or naan for serving
Add 1 T. oil to a large frying pan, add chicken. Cool until lightly browned. Add sweet potato and curry sauce. Cover and cook for 5 minutes. Steam green beans and add to curry.
