Blueberry muffin for one

During this time at home, this is a nice little muffin to make for one or two to share.  If you use wild blueberries you can also get some great immune boosting vitamins.  This recipe comes from a great website, cookingforone.

  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 tablespoons butter , melted
  • 3 tablespoons sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons milk 
  • 1/2 cup blueberries
  •  
  • Mix flour, baking powder and salt in a bowl.  Mix berries into the flour mixture.  In another bowl combine the butter, sugar, egg, milk and vanilla.   Pour this mixture into the bowl with the flour and berries.  Stir well.  Pour into a ramekin that has been sprayed with cooking spray.

  • Combine 2 T. flour, 2 T. oatmeal, a dash of cinnamon, 2 T. brown sugar and 1 T. butter.
  • Sprinkle this mixture on top of the muffin.  Bake at 400 for 15-20 minutes.
