This is recipe number three from my recently purchase Hello Fresh box. It has a wonderful combination of basil, garlic and chili mixed with the beef and served over coconut rice. It is then topped with roasted green beans.
10 oz. ground beef
2 green onions, sliced thin
1 small serrano pepper, sliced thin
1/2 oz. fresh basil, cut into strips
2 garlic cloves, minced
1 red bell pepper, sliced into thin strips
4 oz. fresh green beans
1 lime
1/2 c. basmati rice
1 can lite coconut mil
2 t. oil
Preheat the oven to 400. Place green beans on a baking sheet. Sprinkle with 1 t. oil and a little salt. Bake for 15 minutes.
To make the coconut rice:
Put 1/2 c. water, 1/2 c. coconut milk and a pinch of salt in a small saucepan. Bring to a boil. Add in the rice. Cover and simmer for 15 minutes.
For the stir fry: Heat 1 t. oil in a large saucepan. Add red pepper and saute for 5 minutes. Add in the white part of the green onions, garlic, and serrano pepper. Saute for 3 minutes. Add the hamburger, and cook until no longer pink. Season with salt and pepper.
Serve stir fry on a bed of coconut rice topped with green beans. Sprinkle green parts of onion and basil on top.
