Jalapeno Popper Dip



Football season has begun so it is time for some football snacks for the game.  We usually end up having a hearty snack and no dinner.  Today we are having this dip with some chips and carne asada tacos.  Can I say yum?

8 oz. softened cream cheese
1/2 c. sour cream
1 c. shredded sharp Cheddar Cheese
2-3 chopped jalapenos
1/4 t. paprika
Mix cream cheese and sour cream together until smooth.  Add in remaining ingredients.  Put dip into a small casserole dish and bake at 425 degree oven for 15-20 minutes.
 If you would like a crunchy topping-before baking mix
1/2 c. bread crumbs or cracker crumbs
1 T. melted butter
Sprinkle on dip before baking.

Greek Nachos


A light dinner just perfect on a hot day.  For this recipe you can use pita chips or buy pita bread, cut into triangles and crisp in the oven for chips.

12 oz. pita chips
2 tomatoes, diced
1 cucumber, diced
1 garlic clove, minced
1 c. plain yogurt
1/4 c. diced red onion
1 c. sliced kalamata olives
1 chicken breast, diced
2 t. oregano
6 oz. crumbled feta cheese
1 T.olive oil
In a saucepan put oil chicken and saute until no longer pink.  Sprinkle with 1 t. of the oregano.  In a food processor put 1/2 the cucumber, yogurt, garlic and remaining oregano. Process until smooth.
This is your tzatziki sauce.  Place chips on a baking sheet.  Top with chicken.  Drizzle with sauce.  Top with onion, olives and feta cheese.  Bake at 350 degrees for 7-10 minutes.

Greek Yogurt Cucumber-Radish Dip


This is a nice little dip that combines fresh vegetables, greek yogurt and herbs..and a touch of cream cheese.  It is a great as a salad dressing also.  I adapted this recipe from one shared by our garden ladies at school.  It is wonderful with some fresh vegetables, french bread or crackers to dip.

1 c. plain Greek yogurt
1/2 c. cream cheese
6-8 fresh basil leaves
1/4 c. fresh basil
1/2 English cucumber cut into chunks
4-5 radishes, cut into pieces
Put all ingredients in food processor and mix until smooth.  Refrigerate.
