Pumpkin Streusel Coffeecake



This makes a great coffee cake or even a dessert cake after dinner. It is delicious wit a cup of coffee or tea in the afternoon.  It is an all day enjoyment.  I found this recipe on the blog desserts.com.


For the cake batter
2 c. Flour
2 t. Baking soda
1/2 t. Salt
1 T. Pumpkin pie spice
1 c. Canned pumpkin
1/4 c. Milk
1/4 c. Canola oil
1 t. Vanilla
3/4 c. Sugar

In a bowl mix together the pumpkin, oil, sugar, milk and vanilla until well combined.  Put the flour, baking soda, pumpkin pie spice and salt into the bowl and mix well.  The batter will be thick.  Spray an 8 x 8 inch baking dish with cooking spray. Spread batter in the pan.  Top with streusel. Bake at 350  degrees for 35 minutes.

Streusel
1/4 c. Melted butter
1 T. Cinnamon
1/2 c. Chopped nuts
1/2 c. Flour
1/2 c. Brown sugar
Mix well

Great Pumpkin cookies



Tonight, It’s The Great Pumpkin Charlie Brown will air one again.I thought these cookies would be a great pumpkin treat while watching it. These are big, cake like cookies, extra yummy when warm from the oven.

3/4 c. Butter
1 c. Brown sugar, packed in the cup
1/2 c. White sugar
1 egg
1 t. Vanilla
8 oz. pumpkin
2 c. Flour
1 c. Oats
1 t. Baking soda
1 t. Cinnamon
1/2 t. Salt
2 c. Chocolate chips

Cream butter, then add in sugars and cream some more.  Beat in the egg and vanilla. Slowly beat in 1 c. Flour, the salt, baking soda and cinnamon.  Mix well.  Beat in all the pumpkin.  Beat in the remaining 1 c. Flour and the oats.  Stir in the chocolate chips.  Measure out dough for cookies with 1/4 c. Measuring cup, ice cream scoop or large cookie scoop.  Bake at 350 degrees for 20 minutes.

Starbucks Copycat Pumpkin Bread




This recipe claims to create a pumpkin bread that tastes just like Starbuck's.  The recipe calls for pumpkin seeds on top.  You can substitute any nuts you have on hand if you don't have pumpkin seeds.  I used chopped pecans.  This makes a tasty breakfast or snack.

  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 2 tsp. pumpkin pie spice*
  • 1 t. cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2/3 cup vegetable oil, or canola
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 tsp. vanilla extract
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 2-3 Tbsps. pumpkin seeds
  •  
  • In a mixer combine oil,  eggs, vanilla and sugars.  Mix until smooth.   Mix in pumpkin.  Sift together the flour, spices, and baking soda.  With the mixer on a low speed, slowly add in the sifted mixture.  Spray a loaf pan with cooking spray.  Pour batter into pan.  Sprinkle with nuts. Bake at 325 degrees for 50-60 minutes or until a toothpick inserted into the middle comes out clean.

Bailey's Pumpkin Spice Cookies


1 C unsalted butter
1 1/2 C sugar
3/4 C Baileys
1 tsp vanilla
1 egg, room temperature
1 egg yolk, room temperature
4 C all purpose flour
1/2 tsp salt
3 tsp baking powder
1t. cinnamon
1/4 t. nutmeg
Method:

Preheat oven to 350

Cream butter and sugar until fluffy.
Add Bailey's, vanilla, egg, egg yolk & continue to blend.

Add flour, salt & baking powder. Mix with hands and knead until well formed.
If you want cookies right then and there, roll into 1" balls, and press lightly onto parchment lined cookie sheets about 2" apart.
Sprinkle with sugar and bake for 8-10 minutes or until edges are golden brown.


Or...for rolled sugar cookies.
Allow to refrigerate for at least 2 hours or overnight. Then roll out and cut into shapes.
Bake 6-8 minutes on cookie sheet lined with parchment paper.
Remove from cookie sheet and allow to cool. Frost at your leisure or leave plain.
