Amish Potato Rolls

These rolls are light, fluffy, and oh so delicious with a pat of butter.  I made a batch today for our Thanksgiving feast tomorrow.  Please allow some time if you want to make these..they require two risings of 90 minutes each.  But believe me, the time and wait are worth it.  You can use instant mashed potatoes with good results.
One batch makes 24 rolls.




  • 3/4 C warm water
  • 1 package yeast
  • 1/2 tsp sugar
  • 2 eggs
  • 6 T  butter
  • 1 1/2 tsp salt
  • 1 C  mashed potatoes
  • 1/3 C sugar
  • 4 1/4 C flour
Whip together the water and yeast.  Whip in sugar then allow to sit for 5 minutes.  Beat in eggs, one at a time.  Beat in butter, salt, sugar , and mashed potatoes.  Add flour, one cup at a time.  Knead for 5 minutes.  Form into a ball and place in a large buttered bowl.  Cover and let rise 90 minutes.  Punch down.  Divide into 6 large pieces.  Spray a 13 x 9 baking sidh with cooking spray.  Divide each of the 6 pieces into 4 balls.  Put balls into pan.  Let rise another 90 minutes.
Bake at 350 for 25 minutes.  After removing from oven, brush tops with butter.
