Ginger cookies

Yum!  So delicious and spicy--perfect for the holiday season.  If you want to make them fancy, dip 1/2 of a finished cookie into melted white chocolate.


  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 1/2 cup + 3 Tbsp granulated sugar, divided
  • 1/2 cup packed light-brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 tsp vanilla extract 
In a mixing bowl blend sugars, butter, egg, an molasses well.  Blend in vanilla.  Add all other ingredients.  Refrigerate dough for one hour.  Roll into 1  T. size balls.  Roll balls in sugar, place on parchment lined baking sheet.   Press cookie balls down with the bottom of a glass dipped in sugar.  Bake for 10 minutes at 350.
