It's that Christmas baking time of year again. Biscotti are a wonderful gift with a mug, some hot chocolate mix and a coffee gift card. These are simple and delicious.
- ⅓ cup walnuts, roughly chopped
- ¾ cup granulated sugar
- ½ tsp baking powder
- 1¼ cup + 2 tbsp all purpose flour
- 3-4 T. Nutella
- 1 large egg
- 2 large egg yolks
- Preheat oven to 350ºF.
- Whisk all the dry ingredients together in a bowl.
- In a separate bowl, whisk in Nutella, egg yolks and egg.
- Add dry ingredients and walnuts to the Nutella and egg mix and work the mixture with your hands for about 1 to 2 minutes, until it comes together - it should be a slightly sticky dough ball.
- Divide the dough in half and place them on a piece of parchment paper. Flatten and shape each piece into a rectangular loaf, about 2 inches high.
- Bake in the oven for 25-30 minutes.
- Remove from the oven and let cool for 5 minutes . lower heat to 300º
- Slice the loaves into half and inch thick pieces and place the pieces back on the parchment paper.
- Bake in the oven for 20 minutes. Flip pieces and bake for an additional 15 minutes.
- Turn the heat off and take the biscotti out of the oven. Let cool to room temperature before eating.
