Tuscan Sausage Linguini

This recipe uses chicken Italian sausage--I found some at both Trader Joe's and my local Safeway.  The Trader Joe's variety was quite spicey-so be forewarned.  This recipe and simple to put together and wonderful served up with a simple green salad.


8 oz. chicken Italian sausage
2 cloves garlic, minced
1/4 chopped onion
1 zucchini or 1 c. sliced mushrooms--or both!
1 15 0z. can diced tomatoes, drained
1 oz. parmesan cheese
1/2 t. thyme
pinch of red chili flakes
6 oz. linguine
olive oil

Slice up the Italian sausage .  Put about 1 T. olive oil in a large saute pan, add in the sausage, onion, garlic, mushrooms and zucchini.  Saute until the Italian sausage is well cooked.  Add in the drained tomatoes, one squeeze of lemon juice and the thyme.

In a saucepan bring water to boil.  Add linguine and cook 10 minutes.  Drain and add to the sausage mixture.  Toss well.  Serve topped with a sprinkle of Parmesan cheese
