1/2 cup vegetable broth
1/3 cups vegetable oil
1 cup shredded cheddar cheese
  Mix beans, tomatoes, corn, spices , and cilantro in a saucepan.  Heat over medium heat for about 10 minutes.  While that is cooking mix the masa, vegetable broth and oil together.  Form into 8 balls.Spray a muffin tin with cooking spray. Press one ball down and up the sides of a muffin cup.  Repeat with remaining balls.  Put filling into each muffin cup over masa dough.  Bake for  20 minutes at 350 degrees. Remove from the oven and evenly 
sprinkle the shredded cheese over the filling. Return the pan to the 
oven and bake until the cheese is melted for 10 minutes.
