Chipolte Copycat Chili Corn Salsa


This recipe was recently published in Food Network Magazine.  It is great served with burritos..or try it with my posted Garden Quesadillas.

1/2 poblano pepper, chopped
3 t. olive oil
1 c. corn (fresh or frozen)
1 jalapeno pepper, diced
2 T. chopped cilantro
2 T. chopped red onion
2 T. lime juice
1/2 t. sugar

Mix all ingredients in a bowl.  Stir well, and allow to sit for 20-30 minutes before using.
