Spiced Pumpkin Bread


This is a great, not too sweet, moist and spicy pumpkin bread that is great as a snack or for breakfast.  The recipe makes 2 loaves, one to keep. and one to share!

  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 16-ounce can solid pack pumpkin
  • 3 cups all purpose flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 3 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup coarsely chopped walnuts (optional)
Blend together with a mixer the sugar and oil.  Beat in eggs. Beat in pumpkin.  Add flour, spices, baking soda, baking powder and salt.  Mix well.  Stir in nuts.  Pour into 2 loaf pans that have been sprayed with cooking spray.  Bake at 350 for about 1 hour and ten minutes, or until a toothpick tester comes out clean.
