Baked Chicken and Garlic Orzo


A chicken dish with flavors of garlic, lemon, and oregano...yum!  This is prepared in a cast iron pan or other pan that can go into the oven.  If you do not happen to have one, you can cook the chicken in the skillet and then transfer all the ingredients to a baking dish to put into the oven.

1 T. olive oil
4 chicken breasts
1/2 c. chopped onion
1/4 c. white wine (optional)
10 oz. uncooked orzo
14 oz. chicken broth
2 T. chopped parsley
4 cloves garlic, minced
1 t. oregano
1 t. lemon pepper seasoning
 paprika
Put oil in  skillet with onion, garlic and chicken breasts.  Cook about 5 minutes on each side.  Add white wine, broth, orzo, parsley, oregano and half of the lemon pepper seasoning.  Use the other 1/2 of the seasoning to sprinkle on top of the chicken breasts. Sprinkle with paprika.  Bake in a 350 degree oven for one hour.
