Herb Pan Chicken and Caprese Farro Salad


This is a delicious Hello Fresh recipe that I was able to get off their website.  It combines a little Italian and a little French flavors for a wonderful dinner entree.

4 chicken breasts
1 c. farro
1 c. halved grape tomatoes
6 oz. fresh mozzarella balls
2 T. Herbs de Provence
1 oz. fresh basil
2 T. balsamic vinegar
2 T. honey
1 shallot, diced
3 T. olive oil

Bring 2 cups of water to boil in a large saucepan with farro. Turn down to simmer, cover and cook for 30 minutes. In a large fry pan heat 1 T. olive oil.  Add chicken, sprinkle with salt and pepper and Herbs de Provence.  Cool the breasts for 4-5 minutes per side or until no longer pink. Cut into slices.
Combine farro, tomatoes, mozzarella, basil, honey, shallot, 2 T. oil and balsamic vinegar.  Put into bowls and top with slices of chicken.  Serve.
