This is a tasty fall/winter salad that just brings some nice healthy ingredients to the table in the midst of wishing for summer's bounty to come back. I found the salad dressing recipe on the blog: tinykitchen.org. If you haven't checked it out..I highly recommend it.
Salad Dressing: In a blender mix:
1/2 cup olive oil
2 TBSP red wine vinegar
2 TBSP white balsamic vinegar
2 tsp honey (or pure maple syrup)
1/2 tsp dijon mustard
1 tsp minced garlic
1 TBSP lemon
1/4 tsp salt
1/2 cup, chopped ripe pear pieces
In a bowl combine:
4 c. spinach
1/2 chopped pear
1 c. chopped pecans
4 T. feta or other cheese of your choice
add dressing as wanted to individual portions
