We will be doing a simple barbeque for the 4th of July this year...and this simple salad will go perfectly with a nice grilled steak.
1 orange and 1 red pepper, sliced into lengthwise strips
1/2 c. pitted kalamata olives
1 15 oz. can cannellini beans
1 14 oz. can quartered artichokes
4 oz. cubed mozzarella cheese
2 T. fresh basil
Bake pepper strips on baking sheet with a sprinkle of olive oil . Bake at 400 degrees 15 minutes.
Combine with other ingredients and top with dressing.
Dressing: Whisk together:

- 2 sun-dried tomato halves.
- 1 1/2 tablespoons balsamic vinegar.
- 1 1/2 tablespoons red-wine vinegar.
- 1/2 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt.
- 1/3 cup olive oil.
- 1 tablespoon minced fresh basil, chopped
