Patty Pan Squash Bread


Somehow we have an overabundance of patty pan squash this year...so to use up some of that extra produce I decided to give this recipe a try.  It is very like a loaf of zucchini bread..so if you like that you will probably enjoy this recipe.  This recipe makes one loaf.  If you like nuts, add about one cup of chopped nuts with the squash.

1 1/2 cups flour
1/2  teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 eggs
1/2 cup oil
1 1/2 teaspoons vanilla
1 cup sugar
1 1/2 cups grated pattypan squash
3/4 cup chopped nuts
Beat eggs, oil, sugar and vanilla well.  Add dry ingredients.  Stir in squash and nuts.  Pour into a laf pan that has been sprayed with cooking spray.  Bake at 325 for 50-60 minutes.  Allow to cool.
