Being a big fan of the Great British Baking Show, I recently purchased Paul Hollywood's "How To Bake" cookbook. This is the very first recipe I have tried in the book. If you are like me, you probably have a tried and true banana bread recipe. But come on, this is Paul Hollywood...don't you want to try it? Because it is a British recipe, it is written in grams. You can always google to figure out cups, or use a kitchen scale and measure the grams.
3 large bananas, ripe
250 g sugar
124 g unsalted butter, softened
2 medium eggs
250 g flour
2 t. baking powder
120 g walnuts, chopped
Put bananas in your mixer bowl, and using a paddle attachment mash to bananas well. Add in the sugar and cream until fluffy. Add the butter and beat until well combined. Beat in the eggs, one at a time. Add a spoonful of flour with each egg. Fold in flour and baking powder. Fold in walnuts.
Put into a loaf pan that has been either lined with parchment or sprayed with cooking spray. Bake at 375 degrees F or 190 degrees C. Bake for 40 minutes or until a skewer comes out clean.
