Chicken Parmigano




I have been watching a little Italian grandma cook on you tube.  She inspired me to make this for  dinner tonight.  If you would like to watch her look for her on Buon-A-Pettiti.

2 boneless chicken breasts or 4 chicken tenderloins
2 14 oz. cans diced tomatoes
1T. Italian seasoning
1/2 c. Shredded Parmesan cheese
1 c. Shredded mozzarella chees
2-3 garlic cloves, sliced
1/4 c. Diced onion
1 1/2 c. Italian bread crumbs
1-2 eggs

If using breasts cut them in half to make two thinner pieces of meat.  One at a time put meat between two sheets of plastic wrap and pound until flat.



Whip egg up in a bowl.  In another bowl put bread crumbs.  Salt and pepper chicken.  Dip into egg then bread crumbs.

Set on a plate or cooky sheet.  In a skillet heat 1/4 c. Olive oil.  Over medium heat warm oil then cook chiChen browning both sides.  Set aside.  In a large saucepan heat 2 T. Olive oil and add garlic and onion.  Simmer for 3-4 minutes then add in tomatoes and Italian Seasoning.  Cover and simmer on low for 35 minutes.  Put enough sauce in the bottom of a baking dish to lightly cover it.  Sprinkle with 1/4 c. Parmesan.  Lay chicken on top o sauce and cheese. Put some sauce on top of each piece of chicken then sprinkle with mozzarella and Parmesan.  Bake 35 minutes at 350.
