Gnocchi with white beans and spinach



This is a light, quick to fix meal with just a few ingredients.

1 pkg. gnocchi
1 can diced tomatoes
1 can canellini beans
1 or 2 c. Spinach (more or less depending what you like)
2 cloves garlic, minced
1/4 c. Chopped onion
Shredded Parmesan cheese to taste
1 T. Basil
2 T. Olive oil

Heat oil in a large skillet.  Add onion and garlic and cook 5 minutes on medium heat.  Add spinach and cook 3 minutes.  Add gnocchi and cook until lightly browned.  Stir in tomatoes, beans and basil.  Heat for 5 -10 minutes.  Serve with a sprinkling of cheese.
