Lemon cookie cup cookies



These are a tasty lemon thumbprint cookie filled with lemon curd and sprinkled with powdered sugar.

1/2 c. Butter
1/4 c. Powdered sugar
1 egg yolk
1/2 t. Lemon zest
1 T. Lemon juice
1/2 t. Salt
1 1/4 c. Flour
Lemon curd

Beat butter and powdered sugar.  Beat in egg, lemon juice and zest.  Beat in flour and salt.  Measuring with a Tablespoon, scoop / measure out dough.  Roll into a ball.  Place on a baking sheet that has been covered with a silicone mat or parchment paper.  With your fingertip press into the center of each cookie ball.  Bake at 350 degrees for 20 minutes.

When the cookies hav cooled, fill the center well with lemon curd and sprinkle with powdered sugar.
