Brown Rice with Spinach and Mango Salad


This is a great dish on its own as a main dish salad for a light dinner..or it is also good served on the side of a piece of broiled fish or chicken.  Mango chutney is easily found in most grocery stores and adds wonderful flavor to the dish.

2 c. brown rice, cooked and cooled
1 c. mango, diced-fresh or frozen
1 red pepper, diced
3 green onions, sliced
1/4 c. mango chutney
1 T. red wine vinegar
2 T. olive oil
1 t. garam marsala
1 t. curry powder
1 c. cashews
2 c. baby spinach leaves

Combine the chutney, vinegar, garam marsala and curry powder in a small bowl mixing well.
In a large bowl combine the remaining ingredients.  Mix in the chutney dressing and stir well to combine.
