Gingerdoodles

What could be better than a cooky that combines the taste of ginger snaps and snickerdoodles.  YUMMY!

6 T. butter
1 1/2 c. flour
1 1/4 c. oatmeal
3/4 c. brown sugar
3 T. molasses
1 egg
1 t. vanilla
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
2 t. cinnamon, divided
1 t. ginger
1/4 t. cloves
1/4 c. finely chopped crystallized ginger
1/4 c. sugar


Melt butter in a small saucepan, combine in a mixing bowl with brown sugar and molasses.  Beat well.  Add egg, mix until well combined.  Add vanilla, baking powder, baking soda, salt, 1 t. cinnamon, ginger and cloves.  Add flour and oats.  Mix in crystallized ginger.  Chill in refrigerator for 45 minutes.
Mix remaining teaspoon of cinnamon with the sugar.  Roll cooky dough into ball then roll into the cinnamon sugar.  Place on greased cooky sheet and bake at 375 for 10 minutes.
