Caribbean Jerk chicken pizza

Friday is traditionally pizza night at our house.  When my husband was single living with his son, David, they always would have pizza every Friday.  So when we got together, the tradition continued.  This pizza is sooo good and not one of those you can get at any take out place.  A great way to make a meal yet wow everyone too:)  And while I might not be jetting off during this holiday weekend to somewhere warm and sunny, I can fix this and pretend (sort of) that I am in the Bahamas.

This will make enough for 2 pizzas

Pizza dough:  I make my own (recipe in archives)

Caribbean sauce:
1/2 c. light brown sugar
1/4 c. water
1/4 c. light corn syrup
1/4 c. minced onion
2 T. white vinegar
1 T. minced garlic
1 t. lemon juice
1/2 t. crushed red pepper
1/8 t. dried thyme
1/8 t. allspice
Combine all ingredients in a medium saucepan.  Simmer on medium heat for 7 minutes.  Put in a blender and mix for 10 seconds. 

Jerk seasoning: 
2 T. brown sugar
1 t. salt
1/2 t. pepper
1/2 t. allspice
1/4 t. garlic powder
1/4 t. onion powder
1/8 t. cayenne (optional) or 1/8 t. red pepper flakes
pinch of cinnamon

Mix all ingredients well.

2 chicken breasts, pound thin
1 red bell pepper, sliced thin
1 yellow bell pepper, sliced thin
2 c. mozzarella cheese
1/2 c. cooked bacon, crumbled
1/2 c. onion, chopped
2 T. green onion, chopped

After pounding chicken breasts spray with Pam or other cooking spray.  Sprinkle with jerk seasoning.  Grill chicken.  Slice into bite sized pieces.

Roll out pizza dough.  Spread with sauce.   Sprinkle with 1 c. mozzarella cheese.  Add chicken, peppers, bacon and onion.  Sprinkle on remaining cheese.  Bake and enjoy!
