This recipe comes from a cookbook I discovered while living up in the San Juan Islands. Our house did not have any electricity or running water and I was doing all my cooking on a woodstove. We ate vegetarian a lot in those days. This is one of those old time recipes that is really just pure comfort food.
2 c. very juicy cooked and seasoned beans: cook them yourself or just use a large can of Bush's baked beans
1 c. cornmeal
1 t. baking soda
1/2 t. salt
2 T. butter, melted
2 c. buttermilk
1 egg
OR just use a corn muffin mix
Heat beans until quite hot and pour into a lightly greased 8 x 8 baking dish. Mix the remaining ingredients. Pour cornmeal mixture over beans. Bake at 450 for 30 minutes.
Variation: I am adding about 1 pkg. smart ground (vegetarian meat substitute)
