Tortellini chicken florentine




This is a dish that I made up tonight..it was one of those days that I just look in the pantry, see what I have and make up a recipe.  I am happy to say it turned out quite delicious and I encourage you to give it a try:)
1 pkg. dried tortellini
2 chicken breasts, diced
1 T. olive oil

1/2 t. montreal chicken spice mix
1 can evaporated milk
1/2 c. milk
1 1/2 c. Parmesan cheese
1/4 t. nutmeg
1 pkg. frozen chipped spinach
3 T. butter
3 T. flour
2 cloves garlic, minced
1/2 c. mozzarella cheese
Cook tortellini, drain.  Put olive oil in skillet and cook chicken until tender.  Melt butter in a saucepan, add garlic and cook for 2 minutes.  Add flour, whisk in.  Add all milk and whisk in.  Add in parmesan cheese, stir until melted.  Add spinach.  Grease a 13 x 9 baking dish.  Pour parmesan mixture into baking dish.  Add chicken and tortellini.  Mix all ingredients well.  Sprinkle mozzarella cheese over the top.  Bake at 350 for 30 minutes.
