It is said to be good luck on New Years Day so here is a good hearty soup to not only nourish your body but bring you perhaps some luck for the New Year.
Slowly pour in the broth and tomatoes. Stir in about 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Bring to a boil then reduce heat to simmer for 15-20 minutes. .
- 2 tablespoons extra virgin olive oil
- 1 medium onion, diced
- 1 cup carrots, sliced
- 1 celery stick, sliced
- 1 1/2 tablespoons minced garlic
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons dried oregano
- 5 cups no/low-sodium vegetable broth
- 1- 28 oz can fire roasted diced tomatoes
- 1- 15 oz can fire roasted crushed tomatoes
- 2 cups baby spinach leaves
- 1 15 oz can black eyed peas
- 1 1/4 cup gluten-free macaroni noodles
- fresh parsley and parmesan cheese
