Maui Wowee Chocolate Chip Macadamia Nut Coconut Cookies

  • Recently I bought some Pepperidge Farm cookies with these ingredients-except they used almonds instead of the macadamia nuts.  The cookies were very good..but would have been so much better with the switch in nuts.  And unless they were on sale--they were just a little spendy for the amount you get.  I searched Google and came up with this recipe, which I tweaked a little.  Now I can make the same cookie anytime I want without going to the grocery store.  (That parking lot is getting to be a real racetrack.)

  •  1 cup butter (melted)
  • 21/4 cups flour
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 1/4 cup sugar
  • 11/4 cups brown sugar (packed)
  • 2 eggs
  • 2 tbsps milk
  • 11/2 tsps vanilla extract
  • 2 cups  chocolate chips
  • 1 1/2  cup shredded coconut (toasted or plain)
  • 1/2 cup macadamia nuts (loosely chopped, you want nice, big chunks
  • Mix butter and sugars well.  Add eggs.  Mix in milk and vanilla.  Add flour, salt and soda.  Stir in coconut, chocolate chips, and nuts.  Refrigerate dough until well chilled.  Bake at 375 for 10-15 minutes.
