After a fabulous week in Mexico, I am home and ready to share one of my favorite recipes made for me while there. We stayed in a wonderful rental home with friends and were able to have these two lovely ladies come in and cook for us twice a day. What a delight! Thank you Corizon and Esperanza!
They made this wonderful recipe for lunch one day. It is soooo delicious.
For 2 people (or 4 if you each eat one half) you will need:
2 ripe avocados
1 c. cooked shrimp
1 roma tomato, finely diced
a handful of cilantro, finely chopped
2 slices red onion, finely chopped
1 T. olive oil
1/2 T. vinegar
Cut open the avocados, spoon out all the avocado, just leaving the shell. Dice the avocado and then mix with remaining ingredients. Spoon back into avocado shells.
