Very Veggie Egg Salad

This egg salad has the added bonus of veggies mixed in:  carrot, cucmber, and green onion.. It is great on crackers, on toast for breakfast or on bread for a sandwich.  It is mixed with a combo of greek yogurt and mayo for less calories, more and nutrition.

4 eggs, hard boiled
3 T. plain greek yogurt
3 T. mayonnaise
1 T. chopped green onion
1/2 carrots, grated
1/4 cucumber, diced small
Mash eggs with fork.  Mix in yogurt and mayonnaise. Stir in remaining ingredients.  Sprinkle with salt and pepper.
