Crockpot Spinach Alfredo Lasagna


This is one of those quick crockpot recipes that takes only a few minutes to prepare and makes a easy comfort dinner.

1-2  jars Alfredo sauce ( or make your own recipe!) Use more if you like it real saucey
16 oz. ricotta cheese
1 c. Parmesan cheese
1 T. oregano
2-3 c. frozen spinach, defrosted
2 c. mozzarella cheese
10-12 dry regular lasagna noodles

Spray the inside of the crockpot with cooking spray.  Spread 1/3 c. Alfredo sauce on the bottom of the crockpot.  On top of this layer 3-4 lasagna noodles--you will need to break up one into smaller pieces along the sides.  Mix the ricotta, parmesan and oregano.  Put half of this mixture over the noodles.
Squeeze any water out of the spinach.  Put half of the spinach over the ricotta.  Sprinkle with one third of the mozzarella.  Pour 1/3 of the sauce over this.  Repeat layers.  After the noodles top with remaining sauce.  Cook on low for 3/12 hours.  During the last half hour sprinkle with a little remaining mozzarella cheese.
