Lemony Bean and Greens Salad

This is a wonderful dinner salad when you just want something light and nutritious.  It works as a side salad too.

4 c. salad greens
1 cucumber, peeled and sliced
1/2 c. olive oil
2 T. chopped fresh rosemary
2 lemons
1 can cannellini beans
1 shallot, diced
1/4 c. feta or goat cheese
Drain and rinse beans.  Zest lemon, then juice.  Mix zest, lemon juice and olive oil. Mix beans and lemon mixture.  Stir in rosemary.  Place beans on top of the greens.  Add cucumbers, shallots and cheese.
