Italian Chicken Sausage and Veggie Skewers with Cheesy Herb Orzo


This is a nice dinner to put out on the BBQ while you cook the orzo on the stove.  Orzo only takes 15 minutes to cook, so it is easy to put together while the kebabs are cooking.

1 pkg. Italian chicken sausages, sliced into 1" pieces
1 zucchini, sliced
1 red onion, sliced into large chunks
1 c. orzo
1 small carrot, shredded
1 clove garlic, minced
2 c. chicken broth
1 T. chopped parsley
1 t. oregano
8 grape tomatoes, halved
3 T. parmesan cheese
2 T. butter
On kebab skewers alternate sausage, zucchini and onion.  Barbeque until meat is not longer pink-about 20 minutes, turning frequently.

In a saucepan melt the butter.  Add the carrots, garlic, tomatoes and orzo.  Cook on medium heat for about 5 minutes.  Stir in the broth ad bring to boil.  Cover and simmer 15 minutes.  Drain orzo.  Add in parsley.  Sprinkle parmesan on top.  Serve rice on plate with skewer on top.  Squeeze lemon juice over everything.
