Creamy Garlic Herb Mushroom Spaghetti


This is a great pasta dish without any meat.  If you just have to have some meat I would suggest adding some shrimp or chicken.  I used a mixture of mushrooms, but any kind you like will work.  This recipe make 4 large servings.  (I added some fresh peas.)

  • 8 ounces spaghetti
  • 4 tablespoons butter, divided
  • 3 cloves garlic, minced, divided
  • 16 ounces fresh mushrooms, sliced
  • 2 tablespoons flour (or whole wheat flour)
  • 1 teaspoon herbes de provence
  • 1½ cups milk or cream or half and half
  • salt and pepper to taste
  • 3 tablespoons olive oil
  • additional ¼ cup water, broth, milk or cream (optional)
  • ¼ cup fresh parsley (more to taste)
  • parmesan cheese
Melt butter in a deep skillet.  Add garlic and mushrooms.  Saute for about 10 minutes.  Whisk in the flour.  Cook for one minute then slowly begin adding in the milk/cream/half and half.  Continue to whisk, adding in herbs.  While the sauce is cooking bring a large saucepan filled with water to boil.  Add spaghetti and cook 12 minutes.  Drain.  Toss with sauce.  If desired sprinkle with parmesan cheese.
