Pumpkin Pancakes with Apple Cider Syrup


A fall breakfast fit for a king!  Yummy pumpkin pancakes with a hint of cinnamon covered in a homemade apple cider syrup.  Add a side of sausage and you have an incredible fall breakfast everyone will love.  If you don't want to make the syrup..these are great with maple syrup too!

For the pancakes:
MIx together:
1 c. flour
1 T. sugar
2 t. baking powder
1/2 t. salt
1 t. cinnamon
In another bowl mix:
2 eggs
1 c. milk
1/2 c. pumpkin
2 T. vegetable oil
Mix wet ingredients into dry ingredients.   Pour by 1/4 c. onto hot griddle and cook.

For syrup:
In a saucepan combine:
3/4 c. apple cider or apple juice
1/2 c. brown sugar
1/2 c. corn syrup
2 T. butter
1/2 t. lemon juice
1/4 t. cinnamon
1/4 t. nutmeg
Bring to a boil over medium heat, simmer 20 minutes.
