Pumpkin Mini Donuts


This is an original recipe from King Arthur Flour for baked pumpkins-using a donut pan.  To make a few more donuts, I baked them in a mini muffin pan and they appear as mini donuts.  The recipe makes about 4 dozen mini donuts-enough for a crowd!
For the dough:
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 to 1 1/2 cups granulated sugar
  • 1 1/2 cups canned pumpkin
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 t. cinnamon
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking powder
  • 1 3/4 cups + 2 tablespoons flour

  • Shake in a bag:
  • 1 c. sugar
  • 2 T. cinnamon
Spray a mini muffin pan with cooking spray.  Beat together the oil, eggs. pumpkin, spices, salt and baking powder until well combined.  Mix in flour.  Spoon into muffin pan and bake at 350 degrees for 10 minutes.  Shake in the bag with the cinnamon and sugar.
