Cardamom Blackberry Linzer Cookies


These are a delicious holiday treat that look wonderful on a cookie tray.  You may substitute any flavor of jam that you prefer.

2 c. flour
1 c. salted roasted almonds
2 t. cardamom
1/4 t. salt
1 c. butter
1/2 c. sugar
1 egg
blackberry or other jam
1 T. lemon juice
Confectioners' sugar

In a food processor combine the flour, almonds, slat and cardamom.  Pulse until the nuts are finely ground.  In another bowl mix the butter and sugar until creamy.  Beat in the egg.  Slowly add flour mixture.  Cover and refrigerate about one hour.

Roll dough out on floured surface to 1/8' thick.  Cut with 2-3" round cutter.  With a 1" round cutter cut out a circle from the middle of 1/2 the cookie rounds.  Put on greased baking sheet and bake  at 350 for 12 minutes.  Cool.  Top whole cookies with a spoonful of jam, spreading to cover.  Top with cookie with middle cut out.  Sprinkle with confectioners' sugar.
