These cookies are a yummy shortbread stuffed with nutella and sprinkled with a little hazelnut/sugar recipe. The original recipe called for a 2" cutter which made tiny bite sized cookies. A 3" cutter makes a bit bigger cookie.
1 T. finely chopped hazelnuts (I just used some from a mixed nut assortment)
1 T. sugar
1 1/2 c. flour
1/2 c. confectioner's sugar
1/4 c. cornstarch
3/4 c. butter
2 T. Nutella
1 egg, slightly beaten
Combine flour, sugar, cornstarch and butter in a mixer bowl. Mix until dough comes together. If it just stays dry add a T. of water to the mixture. Roll dough out to 1/8" thickness and cut into rounds with a 2" or 3" cookie cutter, a biscuit cutter will also work. Put 1/4 t. in center of each circle and fold over. Put on greased baking sheet. Brush with egg. Combine sugar and hazelnuts and sprinkle a little on top of each cookie. Bake at 350 for about 10 minutes.
